My household is usually harmonious for any number of reasons. One of the best: because I like flats and my wife likes drums.  My wife enjoys the drumlet side of the chicken wing for the ease of eating.  Drumlets are clean and efficient with only one bone to navigate (that’ what she said…). I, however, find them more often overcooked and dry when compared to their flat counterparts.  I do believe that the second bone in the flat creates space for more even cooking – and more importantly, the bone seeps that sweet, sweet marrow that makes the inside nice and juicy. Are flats harder to eat? Maybe a little, but with a little tenacity and skill, you won’t miss a beat. Check out this dude:
